Salmon stir-fry

You will need for two light lunches:

1 piece of salmon, chopped into chunks

Extra virgin olive oil

3 spring onions cut into strips

Half a red pepper cut into thin strips

Three medium mushrooms, sliced thinly

4oz/100g linguine/tagliatelle

1 oz grated cheese

Chopped herbs

Method:

 While the pasta is cooking in salted, boiling water, fry the vegetables briskly in the oil for one minute. Turn the heat down slightly and add the salmon pieces and stir gently until cooked. Drain the pasta and then add to the salmon mix, stirring continuously. To serve, sprinkle with the grated cheese and chopped herbs.

 

Blueberry Muffins

You will need : (for 6 muffins)

 140g / 4½ oz self raising flour

Half tsp baking powder

25g / 1oz soft margarine

40g / 1½ oz caster sugar

50g / 2oz fresh blueberries

1 large eggs

2 tsps lemon juice

3 fl. oz milk

Method:

 Rub margarine into mixed flour and baking powder. Add sugar and blueberries. Mix egg and milk and stir quickly into dry ingredients adding lemon juice last. Do not overmix, the result should be lumpy.Spoon into greased muffin tins or muffin cases. Cook for approx 20 minutes at 200ºC / 400ºC / Gas mark 6.
